Recipe: Ginger Mojito (Large Batch)
This weekend, we had the privilege of being invited to a beach house on Dana Point with a group of six of our friends. Being the bartender that I am, I knew that I wanted to provide some sort of cocktail for the festivities. Now, being the bartender for your friends can be great at times, but it can also get old quick if you are just trying to relax and have a good time. So I knew that if we were going to have a cocktail, it was going to have to be something large batch that I could just bring and people could serve themselves.
I found a recipe on Chow.com for a large batch ginger mojito. I figured that would be perfect because mojitos usually remind me of the beach and ginger is a great little spice to add to just about anything. I doubled the recipe because it seemed like a small batch for eight people who enjoy cocktails.
2 Cups Organic Cane Sugar
2 Cups Water
2 4inch Pieces of Ginger Root (Peeled and Grated)
4 Cups of Whole Mint Leaves
3 Cups of Lime Juice
2 (750ml) Bottles of White Rum (I used Myers)
2 (1-liter) Bottles of Club Soda
Extra Mint Sprigs (for garnish)
The first step is making the ginger-mint base, which was a simple syrup with ginger.
After the ginger has been peeled and grated, add the sugar, water and ginger to a saucepan over high heat. Bring the water to a boil and allow the sugar to dissolve. This should take about 5 minutes of cooking.
Once the sugar has dissolved, remove the saucepan from the heat, add the mint leaves and let the concoction cool to room temperature. This takes about an hour.
Strain the syrup into a bowl or large glass. Discard the solid. Enjoy the smell of ginger and mint goodness. Add the rum and lime juice. Stir it all together. Refrigerate until ready to serve.
Fill a glass with ice. Fill the cup 1/2 way with the mojito base (2/3 if you want it strong) then fill the remainder of the glass with club soda. Give it a little stir and add a mint sprig for garnish and to make it look pretty.
I love it when a cocktail comes out the way I was hoping for and this one surpassed what I thought it would be. It was refreshing and delicious. The balance of flavors was great and they were strong enough that two of my friends jumped into the ocean at 11:00pm.
I will be making these again for sure.
